The Gaucho is the South America Cowboy. And although they are not as predominate as they once were throughout the ‘Pampas’ of Argentina, their most prized possession was, and still remains today, is his knife! The Gauchos were known for never carrying a gun, only his ‘Cuchillo’ knife. It was his only tool and used for everything; from cleaning his horses’ hooves, cutting his steak, even settling a disagreement. Their knives were fondly referred to as 'The Peacemaker'! 

WHY FIXED BLADE KNIVES ARE THE BETTER CHOICE!

A fixed Blade Knife is stronger, especially ‘full tang’ blades, since the blade actually runs through the knife handle. They are excellent for heavy-duty work and with no moving parts they are much easier to clean than folding knives. They are a much more durable and reliable working tool!

All of our Gaucho knives are 'full tang' and crafted with 440 stainless steel. We do offer a few exceptions, which are also full tang blades with carbon steel blades.

* 440 Stainless steel is a very highly graded material, its stainless is twice as hard as kitchen grade stainless.

There is no replacement for a good, fixed blade knife. When your work goes outdoors, a fixed blade is often a best choice, much better than a folding knife. They are much more robust and much more substantial and can often be abused to a degree no pocketknife would ever be able to withstand. A fixed blade knife can be a tool or a weapon. Fixed blades are often the choice of soldiers, outdoors men, and survivalists, they are essential for any degree of difficult work.

Gaucho knife sizes explained

It is impossible to think of a gaucho without his knife! in ‘a gaucho’s tradition’, the gaucho knife can be used as protection, to cut meat to be consumed or as a shaving razor, but above all, it is a working tool! Among its many tasks as a tool, it is used to; butcher, skin, dehorn, trim horses' hooves, castrate, or to obtain thin strands of a hide to braid ropes for their daily work.

Gaucho knives with a 10cm, 12cm, 14cm length blades are for jobs that require more precision and everyday tasks. They are also used as steak knives for dining. Refered to as ‘verijero’ knife.

Gaucho knives with a 14cm or 16cm length blades also fall into the verijero category. They are favored of barbecue lovers, both for preparing the barbecue and for dining

Gaucho knives with an 18cm or 20cm length blade are multipurpose. They are used in preparation of the meat, barbcue or roast. Refered to as a ‘facon’ knife.

Long-bladed knives are called caroneros. Due to the length of the blade and their considerable weight, they are perfect for portioning roast meat.

Butcher knives are designed to cut heavy duty ingredients such as bones. They are the perfect allies in the kitchen

Steak knives are 12cm to 14cm (knife blade measurement) as you will see is indicated in our product descriptions. Any of these sized knives are suitable for cutting of dining meat portions. It is trendy and suitable to bring your own knife to dine at an Argentine ‘Asado’ BBQ gathering.

All of our Gaucho knife listing described as having an 18cm or 20cm length blade, will be the perfect cutting tool when meat is going from the grill to the serving platter or onto a dinner plate. This knife is a must-have for any grill-mister!

The strength and hardness of the blade makes it ideal for edge retention which means less time required for maintaining the blade but it has a very poor rust resistance capability.


Knife blades lose their sharpness with use, especially the carbon steel blades. A dull knife blade will not only be useless, but can also be more likely to slide off its cutting surface onto a finger or hand! That is why it is important to have the right tool to keep your knife edge sharpened. And ‘knife steel’ is the correct tool for safely sharpening any knife blade.
